  • 1 teaspoon dried thyme

  • 1 bay leaf

  • 6 cups beef broth

  • 1 cup red wine (optional)

  • 3 potatoes, peeled and cut into 1-inch cubes

  • Salt and freshly ground black pepper to taste

  • 2 tablespoons chopped fresh parsley (optional)
